G A L A X Y M I N S T R E L S P I N A T A C A K E
Hey guys, welcome back to the blog, sorry I didn't post very many Halloween posts.
It was a lot harder than I thought.
Anyways, today's blog post; as you will already know, is about a delicious cake that you all will want to try!
Y'all might want to grab a snack and a cuppa for this one cos it's gonna be loooooooooong post!!!
i n g r e d i e n t s
1 Add all ingredients ( except cocoa powder ) in to a bowl and mix until it is smooth and has no lumps.
2 Pour half of the mixture in to a separate bowl and add the cocoa powder
3 Pour the cake batter in to four cake tins with baking paper inside.
Or if you only have two tins ( like me ) then you can just bake two at a time.
4 Put the cakes in to the oven for 25 mins at gas mark four.
5 One the cakes are out of the oven and have finished cooling, cut out large circle from three of the cakes.

mix all of the icing ingredients together until there are no lumps and it is quite light and fluffy.... but don't worry if the texture is quite buttery
7 start icing and layering the three cakes with the circles missing and make sure you go plain, chocolate, plain because it will make the cake look more interesting and fun when you cut into it.
8 Add the galaxy minstrels in to the middle of the cake and fill it up right to the top
* if you don't fill it up to the top then the very top cake layer could collapse *
9 add the top layer of the cake and finish icing all around the cake
10 decorate the cake however you like
I made a cake cat out of the remaining cake left from what was the middle of the three cakes, and I added the spare minstrels around the cake just for some more decoration.

- 350g margarine
- 350g caster sugar
- 6 eggs
- 25g cocoa powder
- 1 teaspoon baking powder
- a whole lot of galaxy minstrels
- 400g butter
- 200g icing sugar
- 50g cocoa powder
